INGREDIENTS
500 g lean turkey mince
1 onion diced
1 egg
1/2 cup bread crumbs
salt & pepper
2 cloves garlic
1/2 zucchini
1 carrot
1/4 cup parsley leaves (fresh or herbs)
2 cheese slices
1 tsp olive oil
METHOD
Preheat oven to 180 c
Combine turkey mince, onion, cheese, carrot, bread crumbs, onion, garlic, parsley, olive oil, salt & pepper and zucchini in a bowl.
Roll into 12 -16 meatballs (tip: Use an ice cream scooper for equal size)
place a tiny slice of cheese on top of each meatball for extra flavor!
COOK:
Place on a rack (to drain the fat)
Place the rack on a baking tray covered in baking paper or foil (I didn't use a rack and the fat didn't drain so use a rack!)
Bake for 25-30 mins until they are browned. (also make sure they are not pink inside)
Serve with some steamed veggies!
